I do believe that these clouds of meringue and coconut are just the kinds of things the angels snack on in heaven. They taste so much like the idea I have of Easter in my head that I think I’ll have to make them every year now. This photo is from the first time I made them back in 2009. I’d clipped the recipe years before, but like most things in life, it took me a while to actually get around to it. If you like meringue (the crunchy on the outside, chewy on the inside kind) and you like coconut, please do not hesitate to try this recipe. It comes from Sunset magazine. Did you see the April issue this year? I thought it was rather sad that there was really no mention of Easter in it (except for a reader’s recipe to use up the leftover ham). I always like reading about anybody’s religious or pagan or whatever holidays and the foods associated with them. At least they still have the recipe on the Sunset recipe site. You can find it by clicking here. Just a couple of notes on the recipe: it seems like unnecessary work to draw circles on parchment for the nests; I never do it and I’ve never been sorry. Also, I’ve only used vanilla for flavoring, but the recipe gives you a rum option as well.
