Tacos are the perfect lazy cook’s supper. They are summer’s answer to winter’s one-pot meal. You’ve got your grain, your protein, some fat –even a salad – all in one. But what makes these so good is the sauce, Frontera Roasted Tomato Taco Sauce. I make mine with ground chicken, cilantro, lettuce and cheese which doesn’t really sound all that exciting, but when you add this sauce they are so very tasty! The sauce comes from Rick Bayless who you’ve probably seen on television (Frontera Grill is one of his restaurants). I found this sauce at Whole Foods, and happily, it doesn’t cost a fortune. One of these days I’ll try Chef Bayless’s recipe for soft tacos that is on the bottle. Looks easy and delicious.
